Une soupe automnale toute réconfortante : panais, carottes, poireau et cumin.

Hécatombe au jardin, la perte d'arbres amis chers, le champ de boue, tout est à refaire. Planter un arbre en sachant qu'on ne le verra pas à maturité, ni même à l'adolescence, exige que l'on fasse abstraction de soi. Mais il y aura du houx et des hortensias bleus.
Slaughter in the garden, the loss of cherished trees, a field of mud, everything must be redone. To plant a tree knowing that you'll never see it grown, or even half-grown, requires a denial of self. But then there will be some holly and blue hydrangeas.

D'après les convives, cette soupe est une des meilleures jamais faites. Prendre 1 litre de bouillon de poulet, 2 carottes, 2 panais et 1 poireau. Faire bouillir les légumes coupés jusqu'à ce qu'ils soient bien tendres en ajoutant du bouillon de poulet au besoin. Assaisoner de cumin et passer au blender pour obtenir une soupe bien lisse. Ajouter 125 ml de crème légère (15 %).
I was told that this soup is one of the best I've ever made. Take 1 liter of chicken stock, 2 carrots, 2 parsnips, 1 leek. Boil the cut vegetables until they are quite tender, adding chicken stock if needed. Season with cumin and blend until the soup is very smooth. Add 125 ml of light cream (15%).

Lendemain de rôti de boeuf - The Day After A Roast Beef Dinner

Les lendemains de rôti de boeuf, c'était toujours fricassée quand j'étais jeune. Prise de nostalgie pour des jours où les tracas étaient plus rares, j'ai refait la recette de ma mère... Couper les restes de rôti en cubes, peler des pommes de terre et couper en dés d'environ 2 cm. Mettre les cubes de boeuf et de pommes de terre dans un chaudron, ajouter une boîte de conserves de jus de tomates, le restant de sauce du rôti, et les restants de carottes. Porter à ébullition, baisser le feu et mijoter pour une heure, en ajoutant de l'eau si le liquide vient à manquer. En fin de cuisson, ajouter les restants de petits pois, du thym, du sel et du poivre. Servir avec des tranches de pain frais beurrées.
The day after we had a roast beef dinner, stew was always on the menu when I was a child. Feeling nostalgic for days when troubles were fewer, I dusted off my mother's recipe... Cut the beef into cubes, peel some potatoes and dice them into 1-inch pieces. Put the beef and potato cubes in a pot, add a can of tomato juice, the rest of the roast beef gravy, and any leftover carrots. Bring to a boil, lower the heat and simmer for an hour, adding water if the liquid level is too low. At the end of the cooking time, add any leftover green peas, some thyme, salt and pepper. Serve with fresh slices of buttered white bread.

Terrine de mousse de foies de poulet -- Chicken Liver Mousse Terrine

La mise en place : foies de poulet (250g), crème fraîche ou crème 15% (2 c. à soupe généreuses), beurre salé (80g), thym citron, sel marin, poivre, dent d'ail (1 grosse), échalotte (1 émincée), généreuse pincée de mélange d'herbes et épices séchées au choix (quatre ombelles pour moi), plat à terrine décoré de rennes (facultatif), gras de canard (2 c. à soupe), baies de poivre rose et brindilles d'herbes fraîches pour la décoration.

Mise en place: chicken livers (250 g), crème fraîche or 15% cream (2 generous tablespoons), butter (80g), lemon thyme, sea salt and pepper, a large garlic clove, one minced shallot, a generous pinch of mixed dried herbs and spices (your choice), one terrine decorated with reindeer (optional), duck fat (2 tbs), red peppercorns and herb sprigs for garnish.

Mettre une noix de beurre dans une poêle et cuire les foies de poulet jusqu'à ce que leur centre soit rosé, mettre dans un robot culinaire. Faire revenir l'échalotte, ajouter aux foies avec la crème, le beurre, les herbes et épices. Réduire en purée lisse, saler et poivrer puis mettre dans la terrine. Décorer de baies roses et d'herbes, faire fondre le gras de canard et verser une fine couche sur le dessus pour sceller. Réfrigérer avant de servir avec craquelins ou pain frais.

Heat a small quantity of butter in a skillet and cook the chicken livers until their center is pink, reserve in a food processor. Cook the shallot, add to the livers with the cream, the butter, the herbs and spices. Process and rectify the seasoning with salt and pepper. Pour into the terrine. Garnish with the pink peppercorns and herbs. Melt the duck fat and pour a thin layer on top of the terrine to seal. Refrigerate before serving with crackers or fresh bread.

Et j'ai peine à croire les autorités pertinentes quand elles affirment qu'on peut manger en toute sécurité les crevettes pêchées dans le golfe du Mexique. Faut-il retenir l'avis de cet expert qui conseille de se fier à son odorat et à ses papilles gustatives?
And I have difficulty believing relevant authorities when they claim that we can safely eat Gulf of Mexico shrimp. Or should we follow this expert's advice when he suggests that the nose knows and to trust our tastebuds?

un atelier, un livre, un repas -- a workshop, a book, a meal

L'affaire était mal partie... j'avais oublié que j'avais laissé le pot contenant les poires pochées derrière la voiture! Heureusement, la voiture n'a fait que renverser le pot dans son sac, sans que les poires ni le pot ne soient écrasés... ouf! J'ai redressé le pot, vidé de son liquide et j'ai vite fait un nouveau sirop au vin.
I was off to a bad start... I'd forgotten that I'd left the jar with the wine poached pears behind the car! Thankfully, I backed up perfectly and the car only tipped the jar in the bag, without running over the pears or the jar... ouf! I picked up the bag with the jar emptied of the liquid and quickly made a new wine syrup.

Finalement, ce furent 8 heures de plaisir, réunissant 8 convives autour d'une table à déguster les 10 recettes préparées durant l'atelier.
Finally, it was 8 hours of fun, 8 people around a dinner table, eating the 10 recipes they had prepared during the workshop.


A Cooking Workshop



Les participants sont repartis avec un livre que j'avais écrit contenant les recettes... petits pots de chocolat, salade de concombre et oignons, tarte flambée, crevettes au sel et au poivre en appéritif, velouté de chou-fleur au cheddar, suivi de ratatouille, de pommes de terre sarladaises et de poussins rôtis emmitoufflés dans les herbes fraîches, une salade agrémentée d'une vinaigrette au bleu et de poires pochées au vin et aux épices, et enfin, une tarte tatin. Je suis repartie avec le plaisir d'avoir passé la journée avec des gens charmants, un magnifique pot de gelée au piment fort et une planche à découper en bois de cerisier et en noyer qui me fera repenser sans cesse à cet atelier.
Participants left with a companion book I had written with all the recipes: chocolate cream ramekins, cucumber and onion relish, tarte flambée, salt and pepper shrimp as appetizers, cauliflower and cheddar soup, followed by herb smothered roasted cornish hens, ratatouille, potatoes sarladaises, a salad with blue cheese dressing and wine poached pears and finally, tarte tatin. I left with the pleasure of having spent the day with charming people, a divine jar of hot pepper jelly and a cutting board made of cherry wood and american walnut that will forever remind me of the workshop.

Le café au lait habituel, mais des céréales chaudes sucrées avec des pommes caramélisées.
The usual café au lait, but with hot cereals sweetened with caramelized apples.

Scottish Oatmeal and Caramelized Apples

Du gruau, du lait chaud et n'oubliez pas d'ajouter une pincée de sel dans les flocons d'avoine pendant qu'ils cuisent.
Oatmeal, hot milk and don't forget to add a pinch of salt to the oatmeal as it cooks.

Pommes de terre à la menthe -- Minted Potatoes

La menthe fleurit (en retard) et j'avais des pommes de terre nouvelles... Signal pour faire des pommes de terre à la menthe. Faire bouillir les pommes de terre dans de l'eau salée, essorer et verser du beurre fondu dans lequel vous avez ajouté de la menthe ciselée. Drôle d'idée? Essayez et vous verrez...

The mint is flowering (a bit late) and I had new potatoes... That's the signal to make minted new potatoes. Boil the potatoes in some salted water, drain and pour melted butter in which some minced mint has been added. Strange idea? Try it and see...
