Un risotto ensoleillé - A Sunshiny Risotto

Ces citrons sucrés (Meyer) me font de l'oeil. Même si la qualité de la lumière a changé et qu'elle fait penser au printemps, il ne fait pas (encore) très chaud et mes pensées se tournent souvent vers Venise. Allez donc savoir pourquoi! Mais les citrons Meyer me font de l'oeil et j'ai donc pensé à préparer un risotto.
The Meyer lemons beckon me. Even if the light has changed lately and that it reminds me of Spring, it's not (quite) warm yet and my thoughts turn to Venice often... go figure! But the Meyer lemons are beckoning me and I thought of making some risotto.

Lobster Mushroom, Asparagus and Meyer Lemon Risotto

J'ai fouillé dans le garde-manger et j'ai trouvé des champignons sauvages séchés que j'ai réhydratés. Dans le frigo, il y avait de belles pousses d'asperges vertes et j'ai toujours des échalotes sous la main. Et j'avais aussi des citrons sucrés.
I found some dried lobster mushrooms in the pantry and I rehydrated them. In the fridge, I had some tender asparagus and I always have shallots on hand. And of course I had some Meyer lemons.

Happiness is a copper pot and Arborio rice

J'ai sorti mon meilleur chaudron en cuivre et j'ai adapté la recette. J'ai omis le parmesan, j'ai utilisé du bouillon de poulet et l'eau utilisée pour réhydrater les champignons. Et voilà!
I got my best copper saucepan out and I adapted the recipe. I left the parmesan cheese out and I used chicken broth and the water used to rehydrate the mushrooms. Et voilà!
