My first Daring Bakers' Event, and I get to bake Morven's suggestion... Dorie Greenspan's birthday cake and eat it too! Up at dawn, this Sunday morning, I got baking... In my family, don't ask me why, birthday cakes are always baked in a bundt cake pan. Now I couldn't break with family tradition, could I? The whole in the middle was perfect to insert a nosegay of spring flowers. The stems of the flowers are encased in some plastic wrap so that they don't actually touch the food, a doily with a whole in the center is wrapped around the flowers.

Mon premier défi Daring Bakers et il faut que je fasse le gâteau de Dorie Greenspan que nous propose Morven (et que je le mange aussi ;-P). Debout aux aurores ce dimanche matin, je me suis mise aux fournaux... Dans ma famille, ne me demandez pas pourquoi, les gâteaux d'anniversaire sont toujours cuits dans des moules Bundt. Impossible de déroger à la règle. Le trou au centre était tout indiqué pour mettre un bouquet de fleurs printanières. Les tiges des fleurs sont placées dans du papier alimentaire en plastique et elles ne touchent pas au gâteau, puis un napperon en papier est attaché autour du bouquet.

Being diabetic, I cut sugar corners wherever I can, so I made the cake with Splenda, used Première Moisson's exceptional strawberry jam (less than half the carb content from other commercial jams, because they use more fruit) and frosted it with our traditional family buttercream frosting recipe, dusted with coconut.
Diabétique, je coupe les coins ronds lorsqu'il y a du sucre, quand je le peux, j'ai donc fait le gâteau au Splenda, et j'ai utilisé la confiture aux fraises de Première Moisson (elle contient moins de la moitié des glucides des autres confitures commerciales, puisqu'ils y mettent plus de fruits) et j'ai glacé le gâteau avec notre recette de crème au beurre familiale et je l'ai saupoudré de noix de coco.

The cake came together quite well but I was worried by the texture of the batter. It seemed very elastic and spongy. Then I remembered that the recipe called for using a spatula to even out the top... perhaps it would be okay, after all... With a bundt cake pan, baking times vary. This cake needed 30 minutes flat baking time. It had risen perfectly. I let it cool for 5 minutes, unmoulded it, and cut a layer about 2/3 from the bottom of the cake (I could have split it into additional layers but I was cutting sugar corners again). I separated the 2 cake layers and let them cool before I spread the strawberry jam, without a layer of frosting (cutting sugar corners again). This is how my mother used to make layered cakes, and the whole experience brought back many birthday cake recipe memories. The cake is very white and it's quite attractive and it's absolutely delicious. For the buttercream and the jam, since we we were encouraged to innovate, as I said before, I used strawberry jam and my family's buttercream recipe.
La préparation de la pâte à gâteau était assez simple mais je me suis inquiétée devant sa texture. Elle semblait élastique et spongieuse. Puis je me suis souvenue que la recette prévoyait lisser le dessus de la pâte à l'aide d'une spatule... je ne devrais peut-être pas m'inquiéter... Avec un moule Bundt, les temps de cuisson sont quelquefois différents. Ce gâteau a nécessité 30 minutes de cuisson. Il a levé merveilleusement bien. Je l'ai laissé refroidir 5 minutes avant de le démouler, puis je l'ai coupé en 2 étages (j'aurais pu faire plus d'étages, si j'avais voulu, mais je pensais à la quantité de confitures). J'ai séparé les 2 étages et je les ai laissé refroidir avant d'étaler une couche de confiture aux fraises entre les deux (je n'ai pas mis de glaçage entre les 2 étages... trop de sucre). C'est la méthode qu'utilisait ma mère lorsqu'elle faisait des gâteaux étagés et ça me faisait me souvenir de bien des gâteaux d'anniversaire. Le gâteau est très blanc et il est très beau et délicieux. Pour le glaçage et la confiture, puisqu'on nous encourageait à innover, j'ai utilisé comme je l'ai déjà dit, de la confiture de fraises et la recette familiale de glaçage au beurre.

MY FAMILY'S BUTTERCREAM
CRÈME AU BEURRE, RECETTE FAMILIALE

Ingredients
1/2 lb of butter | 250 g de beurre
1 lb of confectioner's sugar | 500 g de sucre glace
1 tsp of natural almond extract | 1 c. à s. d'extrait d'amande
small quantity of milk to loosen the frosting | petite quantité de lait pour éclaircir le glaçage

Method
Cream the butter with a hand beater or in the food processor, add the almond extract and progressively add the confectioner's sugar. Add enough milk to keep the icing to a spreadable consistency. | Crémer le beurre avec une moulinette électrique ou au robot culinaire, ajouter l'extrait d'amande et progressivement ajouter le sucre glace, ajoutant la quantité nécessaire de lait pour qu'il s'étende bien.

There was some leftover batter and buttercream so I made some cupcakes. Strange experience to eat a lemon-flavored or blueberry-flavored maraschino cherry.
Il restait de la pâte à gâteau et du glaçage au beurre. Étrange de manger des cerises au marasquin qui ont le goût du citron ou des bleuets.

DORIE GREENSPAN'S PERFECT BIRTHDAY CAKE

For the Cake

2 1/4 cups cake flour (updated 25 March)
1 tablespoon baking powder
½ teaspoon salt
1 ¼ cups whole milk or buttermilk (I prefer buttermilk with the lemon)
4 large egg whites
1 ½ cups sugar
2 teaspoons grated lemon zest
1 stick (8 tablespoons or 4 ounces) unsalted butter, at room temperature
½ teaspoon pure lemon extract

For the Buttercream
1 cup sugar
4 large egg whites
3 sticks (12 ounces) unsalted butter, at room temperature
¼ cup fresh lemon juice (from 2 large lemons)
1 teaspoon pure vanilla extract

For Finishing
2/3 cup seedless raspberry preserves stirred vigorously or warmed gently until spreadable
About 1 ½ cups sweetened shredded coconut

Getting Ready
Centre a rack in the oven and preheat the oven to 350 degrees F. Butter two 9 x 2 inch round cake pans and line the bottom of each pan with a round of buttered parchment or wax paper. Put the pans on a baking sheet.

To Make the Cake
Sift together the flour, baking powder and salt.
Whisk together the milk and egg whites in a medium bowl.
Put the sugar and lemon zest in a mixer bowl or another large bowl and rub them together with your fingers until the sugar is moist and fragrant.
Add the butter and working with the paddle or whisk attachment, or with a hand mixer, beat at medium speed for a full 3 minutes, until the butter and sugar are very light.
Beat in the extract, then add one third of the flour mixture, still beating on medium speed.
Beat in half of the milk-egg mixture, then beat in half of the remaining dry ingredients until incorporated.
Add the rest of the milk and eggs beating until the batter is homogeneous, then add the last of the dry ingredients.
Finally, give the batter a good 2- minute beating to ensure that it is thoroughly mixed and well aerated.
Divide the batter between the two pans and smooth the tops with a rubber spatula.
Bake for 30-35 minutes, or until the cakes are well risen and springy to the touch – a thin knife inserted into the centers should come out clean
Transfer the cakes to cooling racks and cool for about 5 minutes, then run a knife around the sides of the cakes, unfold them and peel off the paper liners.
Invert and cool to room temperature, right side up (the cooled cake layers can be wrapped airtight and stored at room temperature overnight or frozen for up to two months).

To Make the Buttercream
Put the sugar and egg whites in a mixer bowl or another large heatproof bowl, fit the bowl over a plan of simmering water and whisk constantly, keeping the mixture over the heat, until it feels hot to the touch, about 3 minutes.
The sugar should be dissolved, and the mixture will look like shiny marshmallow cream.
Remove the bowl from the heat.
Working with the whisk attachment or with a hand mixer, beat the meringue on medium speed until it is cool, about 5 minutes.
Switch to the paddle attachment if you have one, and add the butter a stick at a time, beating until smooth.
Once all the butter is in, beat in the buttercream on medium-high speed until it is thick and very smooth, 6-10 minutes.
During this time the buttercream may curdle or separate – just keep beating and it will come together again.
On medium speed, gradually beat in the lemon juice, waiting until each addition is absorbed before adding more, and then the vanilla.
You should have a shiny smooth, velvety, pristine white buttercream. Press a piece of plastic against the surface of the buttercream and set aside briefly.

To Assemble the Cake
Using a sharp serrated knife and a gentle sawing motion, slice each layer horizontally in half.
Put one layer cut side up on a cardboard cake round or a cake plate protected by strips of wax or parchment paper.
Spread it with one third of the preserves.
Cover the jam evenly with about one quarter of the buttercream.
Top with another layer, spread with preserves and buttercream and then do the same with a third layer (you’ll have used all the jam and have buttercream leftover).
Place the last layer cut side down on top of the cake and use the remaining buttercream to frost the sides and top.
Press the coconut into the frosting, patting it gently all over the sides and top.

Serving
The cake is ready to serve as soon as it is assembled, but I think it’s best to let it sit and set for a couple of hours in a cool room – not the refrigerator. Whether you wait or slice and enjoy it immediately, the cake should be served at room temperature; it loses all its subtlety when it’s cold. Depending on your audience you can serve the cake with just about anything from milk to sweet or bubbly wine.

Storing
The cake is best the day it is made, but you can refrigerate it, well covered, for up to two days. Bring it to room temperature before serving. If you want to freeze the cake, slide it into the freezer to set, then wrap it really well – it will keep for up to 2 months in the freezer; defrost it, still wrapped overnight in the refrigerator.

Gold Rush - La ruée vers l'or

Never have I worked so hard for a photograph... nearly 500 pictures later, I've got to make a choice... When Jugalbandi announced that the theme for the March CLICK Event was Metal, I instantly thought of those lovely Indian puddings swimming in honey, and often decorated with edible gold leaf... Edible gold leaf is not a common commodity... So I hunted around in my deep neck of the woods for the perfect illustration of gold used in food... I finally found some pastries, decorated with a tiny bit of gold leaf, brought my prize back home and started shooting pictures... the dark chocolate ganache was spotty... So I went hunting for more gold and found the gold painted caramels. The caramel was lovely and oozy, but the chocolate shell was not very golden... So I rushed out for more gold... and found an artisan chocolatier in the city nearby... I told him of my plight, but he had no gold leaf, just gold dust and lovely Brazil nut chocolates dusted with gold. For good measure, he brought out the pot of gold and the paintbrush and gilded the chocolate some more. A few days of shooting pictures in the gloomy end-of-Winter light and several hundred pictures later, I finally woke up this morning to sunny skies. And not a day too soon! So here is my best effort, aiming for the gold at Jugalbandi (top photo).

Spotty Ganache


Je n'ai jamais travaillé aussi fort pour prendre une photo... presque 500 photos plus tard, il faut faire un choix... Lorsque Jugalbandi a annoncé le thème «Métal» pour l'édition de
mars de CLICK, j'ai tout de suite pensé à ces délicieuses boules de pâte indiennes qui nagent dans le miel et qui sont souvent décorées d'une feuille d'or... mais la feuille d'or comestible n'est pas une denrée commune. Alors, je suis partie à la chasse pour trouver la meilleure confection culinaire qui fait appel à l'or dans ma profonde campagne... J'ai trouvé des pâtisseries décorées d'une infime quantité de feuille d'or, j'ai ramené le trophée à la maison et j'ai débuté la session de photos... la ganache au chocolat noir était tachetée... Je donc suis repartie à la chasse à l'or et j'ai trouvé des caramels dont la coque était peinte à l'or. Le caramel était superbe et onctueux, mais la coque n'était pas assez dorée... Je suis donc repartie encore une fois à la recherche de l'or et j'ai trouvé un artisan chocolatier dans la ville voisine... Je lui ai raconté mon problème, mais il n'avait pas de feuille d'or, seulement de la poudre d'or et des chocolats superbes aux noix du Brésil saupoudrés de poudre d'or. Pour mettre la bonne mesure, il a sorti le pot de poudre d'or et le pinceau, et il a redoré les chocolats. S'ensuivirent quelques journées de sessions de photos à la lumière glauque d'une fin d'hiver interminable et quelques centaines de photos. Je me suis enfin levée ce matin par une journée ensoleillée et ce n'était pas trop tôt! Voici alors mon meilleur effort pour gagner la médaille d'or chez Jugalbandi (photo du haut).

Vite fait, bien fait

Je me sens ridicule de donner une recette pour ces pâtes vites faites, mais bien faites. Il y a dans les épiceries tout un assortiment de pâtes artisanales qui nous viennent d'Italie, toutes plus jolies les unes que les autres. J'ai trouvé ces... corolles de fleurs... il n'y a pas d'autre manière de les décrire. En cinq couleurs, orangé, blanc, vert, jaune et rouge betterave. Le rouge betterave ne résiste pas bien à la cuisson, mais les autres couleurs tiennent bien. Une fois cuites à grande eau salée, on égoutte. Entre temps on a fait réduire un peu de crème champêtre (15% m.g.) dans laquelle on met du parmesan, des oignons de printemps et du persil italien hachés. On poivre, on retourne les pâtes pour qu'elles soient bien nappées et on ajoute des morceaux de saumon fumé. On garnit de persil italien et le tour est joué.
I feel ridiculous in giving a recipe for these pasta, quickly done, but well done. There are in our supermarkets an assortment of special pasta from Italy, that are all very pretty. I found these... petunia-like flowers... I can't describe them any other way. Five-colored, in orange, white, green, yellow and red. The beet coloring in the red pasta doesn't hold up well to cooking but the other colors survive the treatment. Once you have cooked the pasta in boiling salted water, you drain them. In the meantime, you reduce some light cream (15%) in which you've added some parmesan, some minced spring onions and Italian parsley. Add pepper, return the pasta to the sauce so that they are well covered and add some pieces of smoked salmon. Garnish with flat leaf parsley and the meal is ready.

VELOUTÉ DE POIREAU
LEEK SOUP

Ingrédients (pour 4 personnes)
  • 2 blancs de poireau | 2 leeks, white part
  • 1 pomme de terre | 1 potato
  • 3 tasses de bouillon de volaille | 3 cups of chicken broth
  • 1/2 tasse de crème légère | 1/2 cup of light cream
  • 1 c. à s. de beurre | 1 tbsp of butter
  • 1 c. à s. d'huile d'olive | 1 tbsp of olive oil

Méthode
  1. Faire revenir les poireaux émincés dans l'huile d'olive et le beurre jusqu'à ce qu'ils ramollissent. Ne pas faire dorer. | Cook the minced leeks in the butter and olive oil until they are tender, without letting them color.
  2. Ajouter le bouillon de volaille, la pomme de terre épluchée et coupée en dés et porter à ébullition. | Add the chicken broth, the diced peeled potato and bring to a boil.
  3. Lorsque la pomme de terre est cuite, mixer avec la giraffe, puis ajouter la crème. Rectifier l'assaisonnement et servir. | When the potato is cooked, mix with a hand blender, then add the cream. Rectify the seasoning and serve.
  4. Garnir de grains de sel de mer noir d'Hawai, ou de feuilles de persil, ou de quelques gouttes de crème, ou... ou... | Garnish with black sea salt from Hawai, or with flat parsley leaves, or with a few drops of cream, or... or...

Quelquefois, on peut se satisfaire de moins lorsque c'est bien présenté, comme un sorbet dans une demi-tasse, par exemple (ne t'inquiètes pas à propos de LA tarte, Léna - à deux, nous en avons mangé le quart puis le reste a été coupé en portions minuscules et congelé pour être consommé en modération, par journées hivernales interminables). La réglementation sur l'étiquetage des produits alimentaires est survenue après un lobbying intensif, entre autres de l'Association canadienne du diabète. Auparavant, il fallait se farcir les tables d'équivalences en glucides et faire des calculs interminables. J'ai été étonnée en comparant le yaourt glacé, la crème glacée et le sorbet. Que fait l'industrie alimentaire pour faire en sorte que le yaourt glacé soit plus dense en glucides que les autres produits? Ils réduisent le gras, mais augmentent le sucre, tout simplement. J'ai bien envie de me procurer une sorbetière et de faire mon propre yaourt glacé, sans sucre et à 2% de matières grasses.
NDLR : Ferdzy m'a laissé un commentaire pour me dire qu'elle a une recette pour faire le sorbet sans sorbetière. Elle me semble efficace et j'ai bien hâte aux fruits frais pour l'essayer. Allez voir ICI (en anglais).
Sometimes you can be satisfied with less when the presentation is attractive, like serving some sherbert in a demi-tasse, for example. Regulations on food product labelling resulted after intensive lobbying by, amongst others, the Canadian Diabetes Association. Before, one had to remember carb count tables and count away ad nauseam. I was surprised when I compared frozen yoghurt, ice cream and sherbert. What is the food industry doing to turn frozen yoghurt into the highest carb product? They reduce the fat, but they increase the sugar level, that's all. I'm tempted to get an ice-cream maker and to make my own sugar-free and nearly fat free frozen yoghurt.

Un Lundi de Pâques Joyeux --- A Happy Easter Monday

Malgré une température arctique, des bourrasques de vent à écorner les boeufs, des poudreries de neige, malgré tout ça durant la fin de semaine, le congé de Pâques a été plus que plaisant. C'était l'anniversaire d'une bonne amie vendredi dernier et je voulais le souligner. La température au réveil quoique plus qu'hivernale (-22) était radieuse... je suis donc partie pour Montréal. L'autouroute était à sec, la route facile.
Despite arctic weather, wind gusts to rip the horns off cattle, whirling and blinding snow clouds, despite all that over the weekend, the holiday was more than pleasant. It was a good friend's birthday on Friday and I wanted to celebrate a bit with her. The weather (albeit -22 in the morning) was radiant... so I left for Montreal. The highway was dry, the driving easy.

Je l'ai prise chez elle et nous sommes parties... Nous avons fait bon usage de notre temps ensemble, en faisant le tour de nos magasins préférés, tout en placotant à 100 à l'heure. En moins de 5 heures, nous lui avons trouvé un joli veston pour le printemps au cas où il se pointe le nez un jour, un tabouret recouvert de tissu pour son salon, de jolis linges de vaisselle... J'ai trouvé un plateau de service à 2 étages en forme d'oeuf et un coffre pour y ranger mes nappes et le linge de table. Nous nous sommes arrêtées là, le coffre de la voiture pense que la voiture est une voiture sport. Il est grand comme un mouchoir. Nous avons eu le temps de déjeuner à notre resto de burgers préféré, puis nous nous sommes rendues au marché...
I picked her up and off we went... We really made good use of our time together, visiting our favorite shopping haunts while chatting away. In less than 5 hours, we found a nice Spring jacket for her in case we have Spring this year, an ottoman for her living room, some beautiful tea towels... I found a lovely tiered egg-shaped tea tray and a chest to store my tablecloths and dinner linens. We had to stop since the car's trunk is not bigger than that of a sports car, the size of a handkershief. We had time to have lunch at our favorite burger place, then we headed to market...

Nous partageons, elle et moi, une passion pour le marché public. Tout est matière à émerveillement. Et pour cause... Les acériculteurs sont là (les producteurs de produits de l'érable). Une productrice vendait avec fierté ses tartes au sirop d'érable. Regardez le soin qu'elle y met... la croûte est toute ourlée. Je n'aurais pas pu faire mieux et elle est délicieuse.
We share, she and I, a passion for the public market. Everything is cause for enthusiasm. Not for naught... The maple producers were at market. A producer was selling with pride her maple syrup pies. Look at the care she puts into them... the pie crust looks like an embroidery. I couldn't have made it as lovely, or delicious.

Vous demandez-vous pourqoi il y a de l'écorce de bouleau blanc dans la photo? Connaissez-vous la superstition qui veut que l'on doive prélever de l'écorce de bouleau le matin de Pâques, que l'on conserve dans son porte monnaie pour avoir des sous tout l'année? Souvenez-vous en l'an prochain. Mon coup de coeur... des radis de Pâques. Imaginez une chasse aux... radis de Pâques pour faire changement de la chasse aux oeufs de Pâques. Vous croyez que les enfants achèteraient l'idée? ;-P Que dire de mes achats? Des côtelettes de porc sublimes, des rognons de veau superbes, des oeufs de caille, du jambon blanc en tranches fines comme des feuilles de papier, des cretons sans MSG de Première Moisson, des carottes fines comme des doigts, des radis multicolores, des asperges vertes, des poireaux, des navets minuscules, des oignons de printemps, des pommes grelots rouges, des mineolas, des tangerines miel et des oranges, du pain de campagne comme je l'aime, des fromages du Québec, de l'OKA et du Portneuf, et LA tarte. L'acéricultrice me disait que la saison des sucres sera longue cette année. Les érables ont les pieds au frais, quand ils ont trop chaud, la sève ne coule plus. Mais la production est lente. Je retournerai donc chercher les provisions d'érable bientôt. Quel beau lundi de Pâques.

Easter radishes. Imagine having an... Easter radish hunt rather than the traditional egg hunt? Do you think children would buy this idea? ;-P What about my purchases? Some superb pork chops, beautiful veal kidneys, quail eggs, paper thin slices of jambon blanc, cretons with no MSG added from Première Moisson, finger thin carrots, multicolored radishes, green asparagus, leeks, tiny turnips, spring onions, small red potatoes, mineolas, honey tangerines and oranges, pain de campagne - my favorite, Quebec cheese, OKA and Portneuf, and THE pie. The maple producer was telling me that maple season will be long this year. The maple trees have their feet in snow and when it's too warm, the sap doesn't flow. But this year's production is slow. I'll just have to go back to get the year's provisions of maple syrup later. What a lovely Easter Monday.

Mes compatriotes le reconnaîtront, l'oeuf de Pâques de Laura Secord. On guette son arrivée, on se régale, puis il disparaît jusqu'à la prochaine année...

Quoi de plus plaisant qu'un brunch, tard le samedi matin? Nous n'avons pas été épargnés par la température ces jours-ci et nos amis en France non plus. Comment gâcher un congé Pascal? Ajoutez-y des tempêtes de neige! On est loin de penser célébrer Pâques en souliers, entourés de fleurs printanières! Un peu de reste de jambon, poêlé, une simple brouillade d'oeufs saupoudrée de piment d'Espelette, quelques feuilles de persil (le persil contient plus de vitamine C que les oranges) et des muffins au maïs (qu'on soit rassuré... à la farine de maïs... ingrédient facile facile à trouver pour nos amis européens)...

Add a good measure of snow storms! Far from us the dream of celebrating Easter with a brand new pair of shoes, surrounded by springtime flowers! A bit of leftover ham, panfried, simple scrambled eggs dusted with piment d'Espelette (a smoky flavoured dried chile powder from the Basque region of France), a few sprigs of parsley (parsley is more vitamin C rich than oranges) and some corn muffins (cornmeal muffins... easy to find ingredient for our European friends)...

MUFFINS AU MAÏS
CORN MUFFINS


Ingrédients
  • 1 cup cornmeal | 1 tasse (250 ml) de farine de maïs
  • 1 cup all-purpose flour | 1 tasse (250 ml) de farine
  • 1/3 cup white sugar | 1/3 tasse de sucre blanc (85 ml)
  • 2 teaspoons baking powder | 2 c. à thé de poudre à pâte (1 petite c. à s.)
  • 1/2 teaspoon salt | 1/2 c. à thé de sel (1 c. à c.)
  • 1 egg, beaten | 1 oeuf battu
  • 1/4 cup canola oil | 1/4 tasse (62 ml) d'huile de canola (colza)
  • 1 cup milk | 1 tasse de lait (250 ml)
Méthode

  1. Preheat oven to 400 degrees F (200 degrees C). Grease muffin pans. | Préchauffer le four à 400 F (200 C). Graisser des moules à muffins.
  2. In a large bowl, mix together corn meal, flour, sugar, baking powder and salt. Add egg, oil and milk; stir gently to combine. Spoon batter into prepared muffin cups. | Dans un grand saladier, mélanger la farine de maïs, la farine, le sucre, la poudre à pâte et le sel. Ajouter l'oeuf, l'huile et le lait; mélanger délicatement (ne pas surmélanger, il y aura des grumaux). Placer le mélange dans les moules (ou papiers) à muffins.
  3. Bake at 400 degrees F (200 degrees C) for 15 to 20 minutes, or until a toothpick inserted into a muffin comes out clean. | Cuire à 400 F (200 C) de 15 à 20 minutes,. jusqu'à ce qu'un cure dents ressorte inséré dans le muffin ressorte sec.

Vendredi Saint --- Good Friday

Sans contredit, la formation universitaire que j'ai le plus appréciée a été celle que j'ai reçue en histoire de l'Art. J'avais visité Florence, lorsque j'avais 17 ans, et son image ne m'avait plus quittée depuis. À Florence, on a le sentiment que quelque chose d'important se passe. Et ce n'est pas un leurre car, sans la Renaissance à Florence, notre iconographie ne serait pas la même, ni notre univers, d'ailleurs.
Without any doubt, the university training I appreciated most was the one I received in Art History. I had visited Florence while I was 17 and it's memory never left me afterwards. In Florence, one has the distinct impression that something important is happening. This is no illusion since, without the Renaissance in Florence, our iconography would not be the same, nor would our Universe.

C'est Vendredi Saint, aujourd'hui. Un moment propice pour réfléchir sur qui nous sommes, d'où nous venons, où nous nous rendons et sur la place que nous occupons dans cet univers par rapport aux autres et en relation à quelque chose ou quelqu'un qui est plus grand que nous.
Today is Good Friday. It's an appropriate moment to reflect on who we are, where we come from, where we are heading and on the place we occupy in our universe in relation to others and to something or someone who is greater than we are.

Je vous propose donc de méditer sur cette oeuvre capitale dans l'Art de Florence, Trinita, de l'artiste Masaccio (Tommaso di Giovanni Cassai). C'est grâce à cet artiste que la peinture se dota de la perspective moderne établie par les principes de Brunelleschi lorsqu'il construisit la cathédrale de Florence. Non seulement cette oeuvre établit-elle une perspective matérielle, elle établit aussi une perspective spirituelle. J'ai écrit cette analyse dans le cours de mes études en Histoire de l'Art. Malheureusement, je ne l'ai pas traduite et je manque de temps ces jours-ci pour le faire. Je vous livre donc mes réflexions, en anglais.
I propose that we meditate on this capital work in Art from Florence, Trinita, by Masaccio. Because of this artist, pictoral Art achieved modern perspective, as established by Brunelleschi's principles when he built the cathedral in Florence. This work not only establishes a material perspective, it also establishes a spiritual perspective.

La Trinita
Sta. Maria Novella, Firenze
Masaccio, 1426-1428

This fresco is a large funeral piece commissioned by the Lenzi family to ornament the wall behind which the donors are presumably entombed in Sta. Maria Novella.

The overall size of the fresco takes into account a corresponding scale between the donors' life-size figures and the viewer, the surrounding elements of the composition being arranged to create a rational whole, thus establishing the framework within which the viewer should approach the work.

The mid-point of the interstice between the kneeling donors situates the location from which the work should be viewed, this point being eye-level to the viewer: a correspondence is thus established by the scale between donors and viewer.

From this perspective, one can see that that the work is horizontally divided into three irregular structural planes that are assembled to represent an altar upon which the donors kneel at either extremity at the base of an upright rectangular building housing a niche. Within the inferior portion of the fresco, an altarpiece represents a sepulchre flanked on either side by double Doric columns supporting the altar's tabula. A skeleton rests upon the sepulchre and the following words, in Italian, are inscribed in the recess on the wall behind it: "What you are, I once was; what I am, you will become". The dialogue solicited by this inscription establishes an entry-point for the viewer into the work.

The top of the altar separates the donors from the inferior portion of the fresco and serves as a step up into the middle plane. The scale correspondence between donors and viewer locates the former in the hic et nunc. The donors' figures are positioned fully facing each other, thus excluding the viewer, on a slight angle within the columns on which the altar rests, the man on the left and the woman on the right. Directly behind the donors' figures and on the same plane, a set of Corinthian pilasters decorate the facade of the rectangular-shaped temple-like structure.

Slightly recessed and on a higher plane, at the base of the upper portion of the fresco, a set of corresponding Ionic columns flank and support the arched opening of the niche. Within it, Masaccio has concretized in pictorial art Brunelleschi's system of perspective, thus representing a recessed chamber with a vaulted ceiling. The back wall of the chamber supports a ledge flanked by a second set of Ionic columns supporting a corresponding arch. According to Janson, Masaccio has applied strict architectural scale in the spatial organization of the elements within the niche, enabling one to draw an accurate floor plan of the chamber.

Level to the entrance columns to the chamber, at a slight converging angle from either donors, stand the Virgin on the left and St. John on the right. Midway between their two figures, the foot of the cross upon which Christ is crucified.

Directly behind and on a slightly higher level than Christ's upper body, the artist has represented God the Father, standing on the ledge at the back of the chamber, arms extended to support the Cross on either side of its horizontal arms.

The human figures are thus grouped in a triangular manner, the donors at the base and God, with Christ's superimposed body on the Cross, at the top. Within this triangle various other triangles progress: Father and Son, Father, Virgin and St. John, Father and donors, Father and Son with Mother and Apostle, Christ and donors. The extension of Christ's arms on the Cross connecting with God's extended arms forms a losange which can be echoed by including the skeleton at the bottom of the fresco. These geometric formations establish additional points of orientation within the composition and find resonance, for a 20th century viewer, with contemporary abstraction elements.

Various paths are created by the repetition of the elements contained within the fresco: for example, the eye can travel upwards or down throughout the work by following the columnar assembly. The posture of the figures also creates paths, one of which might be the female donor's hand presenting the Virgin whose hand, in turn, either presents Christ to the viewer or St. John who is gazing back at the Virgin with clasped hands. If one tries to establish visual contact with the figures, the lowest entry point is the Virgin who stares solemnly at the viewer, thus establishing a dialogue.

The constraints of length imposed on this paper preclude a detailed analysis of other arresting features and essential elements of The Holy Trinity such as the source of light projected by the artist as though emanating from the viewer into the inner sanctum, the symbolism of the arch within the temple structure alluding to Moses' construction of the Arc, the use of light and shadow to define the figures on the chamber's level by opposition to a certain flatness in the treatment of the donors, the alternance of colours for the figures according to gender.

The contemplative tone of the work is set by the positioning of Christ's head within the triangle of God's extended upper body, thus forming a circle within a triangle which strikes a similarity with the use of the eyes in the Icon tradition and also by the richness of detail present, which translates into a magnificent magnitude of execution.

Célébrons l'arrivée du Printemps

J'aime me lever au petit matin... en ouvrant l'oeil à 6 h ce matin, j'ai aperçu un univers de blancheur... les sons étaient assourdis, de petits oiseaux picoraient aux mangeoires, tout n'était que cathédrale de neige. Les montagnes, au loin, cachées par un brouillard de flocons. Il n'y avait qu'une chose à faire pour célébrer l'arrivée du printemps, sortir une serviette de table printanière, la faïence de Gien, se faire chauffer un croissant, se préparer beaucoup de café au lait, commencer le repas par un yaourt crémeux aux mûres (eh oui, le dumping continue!). Vive le printemps... au Québec!

Ils sont arrivés! Les lapins sont arrivés! Il ne faudra pas le dire aux enfants... car les cloches ne reviendront pas de Rome après le Vendredi Saint avant le Dimanche de Pâques! Ouf! Pauvres Lapins, ils ont quelques jours de grâce avant d'être vulgairement bouffés!

Quand j'étais enfant, le jour de Pâques, c'était soit de l'agneau ou du jambon au menu. L'autre jour, chez le boucher, une femme à un stand m'interpelle en me disant « Madame, voulez-vous goûter à mon jambon à l'érable? » J'ai regardé le plat et j'ai répondu « Non, merci ». Les tranches de jambon nageaient dans le sirop d'érable. Ouvrir une boîte de sirop d'érable, le faire chauffer et y échapper des tranches de jambon, tout bêtement, ce n'est pas ça pour moi, le jambon à l'érable... Mais, il y a sûrement des milliers de manières d'aprêter le jambon à l'érable. Voici la mienne... prendre un bon jambon, si possible avec l'os, et tailler la couenne (la peau) en losanges. Faire un mélange onctueux de moutarde à l'ancienne et de sirop d'érable et enduire complètement le jambon de ce mélange. Insérer quelques clous de girofle dans la peau du jambon, puis fixer des rondelles d'ananas, frais si possible, et des cerises au marasquin. Enfourner à 400 F pendant le temps nécessaire pour que la moutarde et le sirop d'érable (vous pouvez utiliser du miel) caramélise. C'est alors la ruée sur cette première tranche toute enduite d'un caramel délicieux. Nous n'aurons pas de jambon à l'érable ce dimanche de Pâques, nous sortons au restaurant pour le brunch Pascal. Mais j'ai fait cuire un tout petit bout de jambon de cette manière. C'est délicieux et ça me rappelle le temps où, sans avoir à manger du jambon pendant 7 jours de suite, il y avait suffisamment de monde autour de la table pour servir un vrai jambon avec l'os.

Et puis les asperges sont là, pas celles du Québec, mais celles du Sud et elles sont délicieuses. Voici une assiette composée dans les règles de l'art du Guide alimentaire canadien. Une tranche de jambon, une portion de salade de pommes de terre avec une sauce à la moutarde ancienne et à la mayonnaise, bien salée et poivrée et bien rehaussée d'oignons de printemps (ne calculez pas la pomme de terre comme un légume, elle est comptée dans la catégorie glucides, car le féculent qu'elle contient est un sucre), une généreuse portion d'asperges cuites à la vapeur et un quartier de citron pour les relever au jus de citron que vous utiliserez pour relever la salade de romaine, oignons, tomates cerises et persil. Saviez-vous que le sel est « perdu » si vous mettes l'huile sur les laitues en premier? L'huile ne dissoudra pas le sel. Selon Lorenza di Medici, il faut assaisonner en sel et en poivre, mettre le corps acide (jus de citron, en l'occurrence), mélanger pour permettre au sel de fondre et d'assaisonner la salade, puis ajouter le corps gras. Si vous commencez le repas par un velouté d'asperges, persil et poireau, vous aurez un repas qui contient au moins 3 portions de légumes, 1 de féculent et 1 de viande. Il vous restera une allocation en glucides pour du pain ou un peu de chocolat, ou encore mieux, des ananas frais. Ou ne mangez pas de pain et prenez un peu de chocolat noir (le chocolat noir est bon pour le système cardiovasculaire) et des ananas. Votre collation cet après-midi était un verre de jus de légumes? Vous avez en tout et partout votre 5 portions de fruits et légumes minimum de la journée. Facile, non?

Non seulement les lapins sont-ils revenus, mais les ratons laveurs aussi. Cette nuit, alors que je traduisais, j'ai entendu un vacarme à ma fenêtre. Il y avait là un ÉNORME raton laveur qui se servait de graines aux mangeoires des oiseaux. Même si nous nous sommes éveillés recouverts d'une autre couche de neige, les animaux sauvages doivent sentir que le Printemps arrive. Il faut les croire...

Biscuits à l'avoine, aux pacanes, à la noix de coco et à l'orange --- Oatmeal, Pecan, Coconut and Orange Cookies

Voici une recette pour des biscuits à l'avoine, mais avec un petit plus... il y a de la noix de coco, des pacanes et du zeste d'orange. Cette recette vous donne 60 biscuits. Puisque je dois prendre une collation avant de me mettre au lit pour pouvoir réguler ma glycémie durant la nuit, c'est le prétexte rêvé pour boire un bon verre de lait glacé et manger 1 ou 2 de ces biscuits. Vous arrive-t-il de vous éveiller vers 3 h ou 4 h du matin? Et si vous prenez un verre de lait ou un verre de jus, vous vous rendormez comme un bébé? Peut-être faites-vous un peu d'hypoglycémie. Toute ma vie, j'ai eu ces épisodes d'insomnie à la fin de la nuit. Si j'avais su que c'était là une alarme pour m'avertir que je faisais de l'hypoglycémie, j'y aurais peut-être porté plus attention.
Here's a recipe for oatmeal cookies, but with a plus... they also have pecans, coconut and orange zest. The recipe yields 60 cookies. Since I have to take a snack at bedtime to regulate my blood sugar level during the night, it's a good excuse to have an ice-cold glass of milk and 1 or 2 of these cookies. Do you ever wake up around 3 or 4 in the morning? And, if you have a glass of milk or juice, you go back to sleep like a baby? Maybe you're suffering from hypoglycemia. All my life, I suffered from these insomnia episodes at the end of the night. If I had known that they were an alarm telling me that I had hypoglycemia, I might have taken closer notice.

J'ai fait cette recette au sucralose (Splenda), ce qui me donne, pour 2 biscuits, 12g de glucides. Ajoutez les glucides dans le lait (car il n'y a pas que des protéines dans le lait), et ça fait une collation comprenant 20g de glucides. C'est bon, je suis en deçà du maximum de 30g. Je vous donne la recette «normale», avec du sucre. Le compte de glucides est beaucoup plus élevé si vous utilisez du sucre. Pour être raisonnable, il faudra vous limiter à un seul biscuit ;-P

I made this recipe with some sucralose (Splenda), so that for 2 cookies, I get 12g of carbs. Add the carbs in the milk (milk not only contains proteins, but carbs as well) and your snack equals 20g of carbs. Good count, I'm well below the 30g maximum. Here's the «normal» recipe, with sugar. The carb count is a lot higher when you use sugar. You'll have to be reasonable and limit yourself to only one cookie ;-P

Ingrédients
  • 1 cup butter | 1 tasse de beurre
  • 1 cup brown sugar, firmly packed | 1 tasse de cassonade, bien tassée
  • 1 cup granulated sugar | 1 tasse de sucre blanc
  • 2 eggs | 2 oeufs
  • 2 teaspoons vanilla | 2 c. à thé de vanille
  • 2 cups sifted all-purpose flour | 2 tasses de farine
  • 1 teaspoon salt | 1 c. à thé de sel
  • 1 teaspoon baking soda | 1 c. à thé de soda à pâte
  • 1 teaspoon baking powder | 1 c. à thé de poudre à pâte
  • 1 cup rolled oats, quick | 1 tasse de flocons d'avoine
  • 2 cups coconut | 2 tasses de noix de coco râpée
  • zest from 1 orange | zeste d'une orange
  • 1/2 cup of crumbled nuts | 1/2 tasse de noix hachées
Méthode
Cream butter, add sugar slowly and beat until light and fluffy. Add eggs, orange zest and vanilla. Beat well. Sift together flour, salt, soda and baking powder; add (stir in) in 4 parts. Mix in oats, nuts and coconut. Drop by teaspoons onto ungreased baking sheets. | Crémer le beurre, ajouter le sucre et battre pour obtenir un mélange léger et crémeux. Ajouter les oeufs, le zeste d'orange et la vanille. Bien mélanger. Mélanger la farine, le sel, le soda et la poudre à pâte; ajouter en 4 additions. Incorporer les noix, les flocons d'avoine et le coconut. Disposer en cuillérées sur des plaques à biscuit.
Bake in a moderate oven, about 375° for 12 to 15 minutes, or until golden brown. | Cuire à feu moyen (375 F) pendant 12-15 minutes, jusqu'à ce que les biscuits soient bien dorés.

Meatloaf américain --- American Meatloaf

Le meatloaf américain est né de la révolution industrielle, lorsque la viande hachée commerciale est arrivée sur les marchés. La tradition de faire un repas de viande émincée finement ou hachée remonte dans la nuit des temps (qu'on pense aux saucisses, aux croquettes de viande, rissoles, terrines, etc.). Souvent servi avec une purée de pommes de terre et des haricots verts, ce qui importe ce sont les assaisonnements dans le pain de viande. J'aime aussi servir une sauce tomatée pour relever davantage. La recette me vient, banalement, des sachets de soupe à l'oignon déshydratée, mais j'y mets mon grain de sel. Ce pain de viande se mange chaud ou froid, les Américains en font quelquefois un sandwich. Pas moi.
American meatloaf was spawned out of the Industrial Revolution, when minced meat became commercially available, at a low cost. Traditionally, meals have been made with finely minced or chopped meat since time immemorial (think of sausages, meat croquettes, terrines, etc.). Often served with mashed potatoes, gravy and green beans, what is important are the seasonings used to flavor the meatloaf. I like to serve a tomato sauce to give it an added kick. The recipe is just a simple onion soup mix envelope recipe, that I modify a bit. You can eat meatloaf either hot or cold and Americans sometimes make a sandwich out of it. I don't.

AMERICAN MEATLOAF

Ingrédients
  • 1 kg de viande hachée (vous pouvez mélanger boeuf, veau et porc, ou tout simplement du boeuf) | 2 lb of minced meat (either a mix of beef, veal and pork or simply beef)
  • 1 sachet de soupe à l'oignon | 1 envelope of dehydrated onion soup mix
  • 2 oeufs | 2 eggs
  • 1/2 tasse de chapelure | 1/2 cup of breadcrumbs
  • 1/2 tasse de sauce chili | 1/2 cup of chili sauce
  • herbes de Provence | herbes de Provence

Mélanger la viande hachée, les oeufs, la chapelure, la sauce chili et la poudre de soupe à l'oignon et les herbes de Provence. Façonner en forme de pain, ou mettre dans un moule à cake ou bundt. Cuire à 350F pendant 60-70 minutes. | Mix all ingredients together and shape into a loaf or place into a loaf or bundt pan. Bake at 350F for 60-70 minutes.

SAUCE

  • 6 oignons de printemps émincés | 6 minced spring onions
  • 1 poivron rouge en dés | 1 diced red bell pepper
  • 1 poireau émincé | 1 minced leek
  • herbes fraîches | fresh herbs
  • 2 tasses de jus de légumes | 2 cups of vegetable juice
  • 1 c. à s. d'huile d'olive | 1 tbs olive oil

Faire sauter les légumes jusqu'à ce qu'ils soient légèrement ramollis, ajouter le jus de légumes et faire réduire la sauce jusqu'à ce qu'elle nappe bien une cuiller. | Cook the vegetables in the olive oil until they are slightly tender, add the vegetable juice and reduce the sauce until it coats a spoon.

2 crumbles faciles --- 2 Easy Crumbles

Avant d'entrer dans le vif du sujet, les crumbles, j'aimerais faire une petite mise en garde. Depuis quelques semaines des commentaires sont laissés où il y a un hyperlien, par des parfaits inconnus qui n'ont rien à voir avec mon blog. Je les supprime systématiquement mais, comme je ne suis pas à l'ordinateur 24/7, il est possible que le commentaire «traîne» un moment avant que je ne le supprime. Toujours aux prises avec le dumping californien de mûres chez mon fruitier, j'avais une barquette de fruits en perdition au frigo. On a beau manger son yaourt quotidien aux mûres, on suffit à peine à la tâche. Il fallait réagir vite. Je me suis demandée pourquoi faire chauffer le four pendant une bonne demi-heure pour une barquette de mûres? Ça me semblait excessif quand je pouvais, tout aussi bien, faire un crumble sans four, sur la cuisinière en moins de 10 minutes...
Still coping with California's dumping of blackberries on our markets, I had a container that was in dire need of attention in the fridge. One might be eating one's daily ration of yoghurt with blackberries every day, one needs to innovate. I had to react quickly. I asked myself why I should heat the oven for a good half hour for just one container of blackberries? It seemed a bit excessive when I could, just as well, make a crumble without the oven, on the stovetop, in less than 10 minutes...

  • 1 barquette de mûres | 1 container of blackberries
  • 2 c. à s. d'eau | 2 tbsp water
  • sucre, au goût | sugar, to taste
  • amaretti | amaretti

Méthode
  1. Mettre les 2 c. à s. d'eau dans une casserole avec les mûres. Sucrer au goût et cuire à feu vif jusqu'à ce que les fruits soient bien compotés (environ 5-10 minutes). Retirer du feu, mettre dans des ramequins et saupoudrer de miettes d'amaretti.
  2. Put the 2 tbs of water in a saucepan with the blackberries. Add sugar to taste and cook on high heat until the fruit have melted down. Remove from the heat, put in ramekins and dust with crumbled amaretti.

CRUMBLE FROID AU YAOURT ET AUX MÛRES
COLD YOGHURT AND BLACKBERRY CRUMBLE


  • 1 barquette de mûres | 1 container of blackberries
  • 1 contenant de 500 ml de yaourt nature | 1-500 ml container of plain yoghurt
  • 2 c. à s. d'eau | 2 tbs of water
  • amaretti | amaretti
  • Sucre au goût | sugar, to taste

Méthode
  1. Prendre les 2/3 des mûres et les passer au blender avec le yaourt pour obtenir un mélange lisse. Sucrer au gout. | Take 2/3 of the blackberries and blend them with the yoghurt until smooth. Add sugar, to taste.
  2. Mettre les 2 c. à s. d'eau dans une casserole et le reste des mûres. Sucrer au goût. Cuire sur feu élevé jusqu'à ce que les fruits soient compotés (environ 5-10 minutes). | Put the 2 tbs of water in a saucepan, add the rest of the blackberries and some sugar, to taste. Cook on high heat until the fruit have melted down.
  3. Mettre du yaourt dans une verrine. Couler de la compote de mûres sur le dessus et saupoudrer de miettes d'amaretti. | Put some yoghurt in a glass serving dish. Pour some blackberry compote on top and dust with some crumbled amaretti.
J'aime les petits papiers dans lesquels les amaretti di Saronno sont emballés. Ils me font penser à de la toile de Jouy. J'ai toujours un pincement au coeur lorsque je les jette.
I love the little wrapping paper around the Amaretti di Saronno. They make me think of Toile de Jouy. I always regret having to throw them out.
