Sorbet aux mûres et fuchsia -- Blackberry and Fuchsia Sorbet

Les fuchsias sont des fleurs spectaculaires. Pas étonnant que les oiseaux-mouches en soient si friands. La fleur, comme la baie, est comestible. La baie est plus intéressante, d'un point de vue gustatif car la fleur a un goût acide prononcé. Mieux vaut s'en servir pour décorer de façon spectaculaire les plats. Pour la baie, l'usage consacré est d'en faire une gelée.
Fuchsias are spectacular flowers. No wonder hummingbirds go crazy for them. The flowers, like the pods, are edible. The pods are more interesting, taste-wise, than the flowers that have a highly acidic taste. Better to use them to make a spectacular presentation. For the pods, these are usually prepared in a jelly.

Ingredients
  • 1 1/2 tasses d'eau | 1 1/2 cups water
  • 1 tasse de sucre | 1 cup sugar
  • 3 tasses de mûres fraîches | 3 cups fresh blackberries
  • 3 c. à table de jus de citron (1 citron) | 3 Tbs. fresh lemon juice (from 1 lemon)
Method
  1. Dans une casserole à fond épais, sur feu moyen, combiner l'eau et le sucre. Amener à ébullition et cuire, en mélangeant de temps à autre, jusqu'à ce que le sucre soit bien dissout et que le sirop soit clair (environ 1 minute) | In a heavy saucepan over medium-high heat, combine the water and sugar. Bring to a boil and cook, stirring occasionally, until the sugar dissolves and the syrup is clear, about 1 minute.
  2. Ajouter les mûres au sirop et faire bouillir sur feu moyen. Réduire la chaleur et laisser mijoter, en remuant de temps à autre, jusqu'à ce que les fruits soient ramollis et qu'ils commencent à se décomposer (environ 2 minutes) | Add the blackberries to the syrup and bring to a boil over medium-high heat. Reduce the heat to medium and simmer, stirring constantly, until the berries are soft and beginning to dissolve, about 2 minutes.
  3. Passer les fruits au chinois dans un saladier, en pesant sur les mûres avec le dos d'une cuiller. Jeter la pulpe et les pépins de mûres. | Strain the berries through a fine-mesh sieve into a bowl, pressing on the berries with the back of a large spoon. Discard the blackberry pulp and seeds.
  4. Ajouter le jus de citron au sirop de mûres et mélanger. Vous devriez avoir environ 1 tasse et demie de liquide. Couvrir et réfrigérer pour refroidir (au moins 3 heures et jusqu'à 8). | Add the lemon juice to the blackberry syrup and stir to combine. You should have about 1 1/2 cups liquid. Cover and refrigerate until chilled, at least 3 hours or up to 8 hours.
  5. Verser le sirop de mûres dans une sorbetière et suivre les instructions du fabricant. Transférer le sorbet dans un contenant pour le congélateur et le faire congeler pour un minimum de 2 heures (jusqu'à 3 jours) avant de servir. | Pour the blackberry syrup into an ice cream maker and freeze according to the manufacturer's instructions. Transfer the sorbet to a freezer-safe container and freeze until firm, at least 2 hours or up to 3 days, before serving. Makes about 1 pint.
