Nothing is more traditional than a tourtière (meat pie) in Québec. And I can hear each and every Quebecer sharpening their knives... to throw them at me! There are as many recipes for tourtière as there are Quebecers. And the debate is heated about which is the best recipe. So I'll just give you my family recipe, and others can do the same, if they wish. And I don't want to hear anyone say that they have THE recipe...!

Why is it called a tourtière? Culinary historians will want to debate on the subject. Perhaps it's because, at the beginning, there were lots of doves (tourterelles) in Quebec, a bird that is easily caught. So much so that the dove population got decimated... It was quite an event when, 10 years ago, some mourning doves appeared in the garden and I wouldn't dream of cooking them up in a pie... for tourtière is a pie, and perhaps pigs have replaced doves?

Some use veal and pork, others, veal, pork and beef, others still, only pork. One mustn't think that tourtière is a cipaille from Gaspesia (originally a mixture of deer, moose, partridge and hare) or tourtière du Lac St-Jean (originally made with doves)... completely different dishes. No, tourtière is a combination of minced meat, slowly cooked with onions and garlic, with some bread crumbs added to sop up the cooking juices. The essential ingredient in my family? Cloves, the friend of pork. Here then is my recipe for Québec Tourtière, à la mode of the Blue Cat.

Tourtière is a traditionnal Holiday dish, just like ragoût de pattes de cochon, roasted turkey, doughnuts, Yule log, fruitcake, plum pudding, date squares... from mid-November until the days preceding Christmas, in Québec kitchens, its Operation Prepare the Tourtières which are then frozen to be brought to the table during festive occasions. In my family, we reserve a good quantity of this meat filling to stuff the Christmas turkey.
