In Quebec, if you're looking for fine spices, there is but one address ... Philippe de Vienne at Marché Jean-Talon (Olives & Épices or La dépense). So! Imagine my enthusiasm yesterday afternoon when I spotted this book written by .... Ethné and Philippe de Vienne!

Just like the author, fine gourmet and connoisseur, globe-trotter and bon vivant, these little cartoons on the back cover amused me straight away...

A good-natured physique, one guesses right away that he is passionate (and communicative).

But don't be taken in, just one look inside the manual (because this is not a mere book we're talking about) will convince you... this is a more than serious work!

Ethné and Philippe de Vienne know their stuff. Not only do they talk about spices, they also explain about taste and taste sensations.

Then it's around the world, in its most hidden places, all in spices: the Mediterranean (Crete, Provence, Morrocco, Andalusia, Turkey, Antioch), South Asia (Hind, the Spice Coast, Sri Lanka, the curry routes), the Far-East (Sechuan and Yunnan, Sumatra, Bali), Central America (Oaxaca, Yucatan, the Carribean, Louisiana)... and recipes, and travel stories and spice hunting stories, and glossaries (practical or multilingual), and recipes for spice blends, and did I say recipes? Classics (vindaloo, Creole or Oaxaca chocolate, Mauritian stag masalé, English curry, black curry from Sri Lanka, raïta..., ..., ...) and recipes that teach how to innovate with spices. It's a work that is filled with generosity, knowledge and love of spices. And the photos are lovely. An absolutely magnificent work!
